In a large mixing bowl, add:The full bag of pancake mix3 ½ cups milk2 eggs½ cup melted butter1 tablespoon vanilla extractWhisk until the batter is smooth. Small lumps are okay!Rest the Batter (Optional)
If you let your pancake batter sit for 5–10 minutes, it allows the sourdough to hydrate fully. This step helps to improve fluffiness and flavour.Heat Your Griddle
Preheat a non-stick pan or griddle over medium heat. Lightly grease with butter or oil.Cook the Pancakes
Pour ¼ cup–½ cup batter per pancake. Cook until bubbles form on the surface and the edges look set.Flip and cook another 1–2 minutes until golden brown.Buon Appetito!
Serve warm with your favourite toppings! A few of our guest favourites are: Maple syrup, berry compote, whipped cream, Nutella, or sprinkled with a little cinnamon sugar.
Notes
These pancakes freeze EXTREMELY well! We batch them and freeze them for our toddler all the time. Definitely one of our kitchen staples!
